Easy Cherry Cobbler


Happy Christmas Eve, friends! It's the holiday season, so I bet you're looking for warm and cozy recipes. This SUPER easy dark cherry cobbler is just that. The best part is it's not limited to just the holidays. It makes the perfect addition to your dinner, get-together, or cozy night any time of the year!


I've made this recipe super duper easy (and easy to follow) in case you're a newbie in the baking department. Using frozen cherries and everyday pantry staples just makes it so easy to have everything on hand at all times so you can bake when your heart desires! Plus you don't have to worry about your cherries going bad in the fridge or pitting fresh ones!


This brings me to my next point: ensure your frozen cherries are pitted. It is easy to accidentally pick up the wrong ones at the store, so just be mindful of that.


As for everything else, it's pretty self-explanatory. Cornstarch, Flour, Sugar, Butter, ya know, the normal everyday baking crew. Don't worry if you do not have almond extract on hand. It pairs well with the cherry flavor, but not adding it will not alter the taste of your dish dramatically.

Easy Cherry Cobbler Recipe:

Yield: ~6 servings

Serving Size: ~1 cup of cobbler


For the Cherry Filling:

  • 16 oz bag frozen pitted cherries

  • 1/2 cup granulated sugar

  • 2 tbsp cornstarch

  • 1/2 tsp almond extract

  • 1/2 tsp vanilla extract

  • 1 tbsp lemon juice

  • 1/4 tsp ground cinnamon


For the Crust:

  • 1 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup unsalted butter, melted

  • 1/4 cup whole milk

  • 1/2 tsp vanilla extract


Directions:

  1. Preheat oven to 375 degrees F and grease an 8x8 pan or a pie dish lightly.

  2. In a mixing bowl, combine the cherries, sugar, cornstarch, almond extract, vanilla extract, lemon juice, and cinnamon. (If you do not have almond extract, that is ok. You can omit it. It adds extra flavor & complements the cherries well, but isn't necessary for the overall integrity of the dish.)

  3. Mix until the cherries are well coated, then pour into the prepared baking dish/pan.

  4. In a bowl, whisk together flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Stir until just combined; the batter will be thick but spoonable.

  5. Drop spoonfuls of the batter over the cherry filling. It is okay if gaps remain (this is normal). The topping will spread slightly as it bakes.

  6. Bake the cobbler for 35-40 minutes, or until the topping is lightly golden and the cherry filling is bubbling. If the topping starts to brown too quickly, loosely cover the dish with foil during the last 10 minutes.

  7. Let the cobbler cool for 10-15 minutes before serving. Enjoy warm with a scoop of vanilla ice-cream or a dollop of whipped cream!
