Cranberry Cake Roll

It's that time of the year again! Today, I have a delightful and visually stunning recipe for you - a Pink Cranberry Cake Roll. In this recipe, the filling will be pink. The cake will be a regular sponge cake. On top, there will be a thick white frosting smoothed over the roll with a garnish of frozen cranberries (that give the frosted look to the final presentation!)


This dessert not only tastes amazing but also looks like a work of art with its pink-hued filling and frosted cranberries on top. It's the perfect treat to impress your guests or simply indulge yourself in a sweet delight.


So, let's dive into the world of baking magic!


 

Cranberry Cake Roll

Yield: 1 cake roll

Serving Size: 8 slices





Ingredients:

  • 4 large eggs

  • 3/4 cup sugar

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup cranberry juice

  • 1-2 drops pink food coloring

  • 1 cup frozen cranberries

  • Vanilla frosting of choice (My classic white frosting is perfect for this!)





Instructions:

  1. Preheat your oven to 350°F and line a 10x15-inch jelly roll pan with parchment paper.

  2. In a large bowl, beat the eggs, sugar, and vanilla extract until thick and pale.

  3. Sift in the flour, baking powder, and salt, and gently fold into the egg mixture.

  4. Pour the batter into the prepared pan and spread it evenly.

  5. Bake for 12-15 minutes or until the cake springs back when lightly touched.

  6. While the cake is baking, place the frozen cranberries on a paper towel to thaw slightly.

  7. Once the cake is done, remove it from the oven and let it cool for a few minutes.

  8. Carefully roll the cake from the short end with the parchment paper inside and let it cool completely.

  9. Unroll the cake, remove the parchment paper, and spread the frosting inside. You can use white for this, but I used a small amount of red gel coloring in my classic white frosting to create a pink frosting.

  10. Roll the cake back up without the parchment paper. Spread white frosting on top, carefully covering the roll.

  11. Decorate the top with the slightly thawed cranberries. I also added some star sprinkles to mine that I got from Target.
