Cranberry Brie Mini Pies Recipe
Yield: 14 mini pies
Serving Size: 1 mini pie
Ingredients:
1 package Pillsbury mini pie crust dough (14 crusts)
1/2 cup Terrapin Ridge Farms Cranberry Relish w/Grand Marnier
16 oz brie cheese, rind removed and cut into small cubes
2-3 strips of bacon, cooked until crispy, crumbled
1-2 sprigs fresh thyme (or 1/2 tsp dried thyme)
Optional: Garnish with chopped walnuts, toasted pecans, or fresh thyme leaves for added texture
Instructions:
Preheat oven to 350 degrees F.
Place pie shells into an ungreased, non-stick muffin tin and shape into mini pies.
NOTE: This recipe makes 14 mini pies so you will need 2 muffin tins. Or you can make 12 pies and use the 2 remaining crusts to lattice your pies. You'll want to bring these out from refrigerated (not frozen) and leave them on the counter at room temperature for at least 15 minutes prior to working with them. You can also pop the roll of dough into the microwave for about 15 seconds to soften it up. If you do not, the pie crusts will crumble when you unroll it.
Drop a small cube of brie in the center of each pie shell. Spoon about 1 teaspoon of cranberry relish over the brie.
Place the pies into the preheated oven and bake for 15-20 minutes, or until the brie has melted and the pie shells are golden brown.
Remove from oven and cool in the muffin tin for 10 minutes. Remove pies and arrange on serving platter. Top with bacon crumbles. If garnishing with thyme or other toppings, add now.
Store in the refrigerator for up to 3 days. (Anything beyond that, the pies become soggy)
